Anyway, I've just made your chestnut puffs and they were divine. I didn't want to open a bottle of red just for 20ml (as I live by myself and am not much of a drinker) so I used a splash of balsamic vinegar, which worked a treat. I have to say though, I had a complete nightmare trying to peel the chestnuts after 10 minutes in the oven. The outer shell came off easily enough, but the inner skin really didn't want to be removed from most of the nuts - it took me an hour to peel about 15 of them and some of the skins went down my fingernails - ouch! Are chestnuts always so much trouble or did I do something wrong?! Think I'll buy pre-peeled in future! Can't wait to try more of your scrummy recipes! :)

It's a powder that you can buy from health food shops that supposedly works in place of egg. I think it's better just to use recipes that weren't designed with eggs in mind. I do know some people who like it though. Hope that helps!

I've also found the receipe makes good fairycakes too. Make the peanut butter cookies with kids, fantastic and soooo easy, they love and so do all their friends.
