Cooking Time: 20 minutes
Quantity: Serves 3 or 4
Vegetable oil or vegetable ghee
1 potato, peeled and diced
1 onion, sliced
1 clove garlic, sliced
1tsp grated ginger root - optional
2 cardamom pods - optional
1/2 tsp fennel seeds - optional
1/4 tsp ground cumin
1/4 tsp ground turmeric
1/2 tsp ground coriander
1/4 tsp chilli powder
250g (9 oz) fresh spinach. (8 mini portions if using frozen spinach).
1/4 tsp salt
A dash of lemon juice
1) Pour some boiling water into a saucepan and boil the potato cubes for a few minutes until almost cooked.
2) Heat oil or ghee in a saucepan over medium heat and fry onion and spices until onion is slightly browned.
2) Add spinach and drained potato cubes and turn down heat. Add salt and lemon juice and simmer (covered) for about 15 minutes until cooked.
