Natasha's Favourite Lentil Pate
Cooking Time: 30 minutes
Quantity: Serves 10
225g (8 oz) red lentils
25g (1 oz) margarine
4 tsp mild curry powder
3 tbsp tomato puree
1 tsp lemon juice
Salt and pepper
1) Boil the lentils for 30 minutes, then drain and mash with a fork.
2) Chop the onion finely, then fry in the margarine until soft. Add curry powder and fry for a further 2 minutes.
3) Add all the other ingredients and mix to a smooth paste.
4) Transfer to a serving dish or storage container and allow to cool. Cover, and store in the fridge until needed.
