Broad Bean Paté
 |
Cooking Time: 15 minutes
Quantity: Serves 4
I made this with the beans from my veggie box. To be honest I'm not too keen on broad beans and was trying to disguise the flavour! Fans of the broad bean will be pleased to know that it didn't really work, and tasted very broad beany - and that the thyme and garlic went very nicely.

Ingredients
half a bag of broad beans (handful of pods)
3 cloves of garlic
drizzle of olive oil
salt and pepper
sprig of thyme, chopped
Instructions
1) Remove the broad beans from their pods and boil them with the garlic cloves for about 15 minutes. Drain and cool.
2) When the beans are cool enough to handle, remove the outer skin of each bean to reveal the brighter green 'inner bean'!
3) Blend the beans and garlic with a hand blender and add the salt, pepper and thyme.
4) Spread on crackers or bread.
