Quantity: Serves 4
Really quick and easy.
1 or 2 tbsps vegetable oil or margarine
1 large onion
2 celery sticks
600 - 900ml (1 1/2 pints) vegetable stock
Salt and pepper
1) Finely chop the onion and slice the carrots and celery.
2) Heat oil or margarine and add all the vegetables.
3) Cook, covered, over a medium heat for about 10 minutes until the vegetables are softened.
4) Add stock and cook for a further 10 minutes. Season.
