Vegetable oil
1 onion, chopped finely
150g (6 oz) red lentils
1 tin tomatoes
900ml (1 1/2 pints) water
Thyme - fresh or about 1/2 teaspoon dried
Salt and pepper
Instructions
1) Fry onion until browned.
2) Add tomatoes, water, lentils and thyme.
3) Bring to the boil and simmer for 30 minutes. Season well.
