Dublin Coddle
Ingredients
1 Kilo of peeled potatos
300 gm of onions
6 vegan sausages
1 teaspoon of dried parsley (or fresh if available)
Salt to taste
1 vegetable stock cube.
800ml of water
Instructions
Slice potatoes and roughly chop
Slice and chop onions
Chop sausages to about 1.5 cm (half inch) lengths
Place all ingredients in a large saucepan and bring to the boil. Reduce the heat to a gentle simmer and cover.
Check regularly and stir until the potatoes start to break down and the coddle thickens.
Serve with green vegetables.
