Cooking Time: 35 minutes
Quantity: Serves 4
1 or 2 tbsp vegetable oil or margarine
1 large onion
1 head of celery
900ml (1 1/2 pints) vegetable stock
Salt and Pepper
150ml (6 fl oz) soya milk
1) Finely chop the onion and celery.
2) Heat oil or margarine and add the vegetables. Cook for about 10 minutes until soft, then add the stock.
3) Simmer for 25 minutes then allow to cool slightly and purée with a blender.
4) Reheat, season, and add soya milk before serving.
