Carrot Soup




Cooking Time: 30 minutes
Quantity: Serves 4



Ingredients

1 or 2 tbsps vegetable margarine
500g (1 lb 2 oz) carrots
2 onions
900ml (1 1/2 pints) vegetable stock
300ml (1/2 pint) soya milk
Handful of fresh coriander - chopped
Salt and Pepper

Instructions

1) Finely chop the onions and slice the carrots.
2) Heat margarine and add the onions and carrots. Cook for about 10 minutes until soft, and add the stock and soya milk.
3) Simmer for 15 minutes then allow to cool slightly and purée with a blender. Add coriander.
4) Reheat and season before serving.
