Cabbage and Lentil Soup
Cooking Time: 30 minutes
Quantity: Serves 6
1 onion, chopped finely
1 clove of garlic, chopped or crushed
225g cabbage (about half a medium sized cabbage),finely shredded
3 medium sized potatoes, peeled and diced
About 1500ml water
2tsp vecon stock paste (or 2 vegan stock cubes)
1) Fry onion for a few minutes until it's almost browning.
2) Add everything else. (Garlic, cabbage, water, potatoes, lentils and vecon.)
3) Bring to the boil and simmer for at least 30 minutes.
4) Serve it as it is, or let it cool and puree it with a hand blender or food processor, then reheat.
