Quantity: Serves 4-6
1/2 of an onion (red onion is good)
1 or 2 large chillies, deseeded (red or green)
5 or 6 ripe tomatoes
2 tbsp chopped fresh coriander or parsley
Juice of 1/2 a lime
1 tsp white wine vinegar
Salt and pepper
1) Very finely chop the onion and put it in a bowl.
2) Slice the chillies in half lengthways and discard the seeds. Chop them into very small pieces and add to the onion. Wash your hands (and don't rub your eyes!).
3) Put the tomatoes in boiling water for about a minute. They should now be easier to peel. Drain and peel the tomatoes. Chop them into quarters, remove the seeds and chop the remaining tomato into small pieces. Add to the onion and chilli.
4) Stir in the chopped herbs, lime juice and vinegar, and season with salt and pepper.
