Cooking Time: 10 minutes
Quantity: Serves 6

Remember to wash your hands very well after chopping chillies!


Ingredients

25g (1 oz) vegetable margarine
1 onion
1 or 2 red chillies, chopped finely
3 fresh tomatoes - chopped (put them in boiling water for 3 minutes then peel and chop) or 1/2 tin tomatoes
1tsp tomato purée
1tbsp vinegar
3tsp demerara sugar

Instructions

1) Slice the onion into rings about 5mm thick. Cut into halves or quarters.
2) Melt margarine in a saucepan and cook the onion until it is soft and slightly caramelised.
3) Add tomatoes, tomato purée, chillies, vinegar and sugar and cook for about 5 minutes.
