Cooking Time: 20 minutes
Quantity: Serves 4
1 clove garlic
1/2 a cauliflower - broken into florets
2 potatoes - peeled and diced
2 carrots - peeled and sliced
100g (4 oz) peas
1/4 tsp ground cumin
1/2 tsp ground turmeric
1 tbsp mustard seed
1 chopped green chilli pepper or 1/2 tsp chilli powder
1/2 tsp sugar
1/2 tsp vecon stock paste or 1/2 tsp salt
About 75ml (3 fl oz) water
1) Heat oil in a large saucepan. Add onion and garlic and fry with the mustard seeds and spices.
2) Add all the other ingredients and simmer for about 20 minutes until potatoes are cooked, adding more water if necessary.
