Thai Crispy Duck
Ingredients
2 tbsp vegetable oil
1 tin of 'mock duck' (gluten based - from health food shops or chinese supermarkets)
About 3 tbsp sweet chilli sauce
Instructions
1) Pour oil into a roasting tin and preheat the oven.
2) Drain the mock duck, and arrange the pieces in the roasting tin.
3) Drizzle over the sweet chilli sauce.
4) Cook for 10-15 minutes until crispy at the edges.

This is more of an idea than a recipe! I either put mock duck in Thai green curry, or do it like this to go alongside.
