Pine Nut Squares
Oven Temperature: 200ºC/400ºF/Gas 6
Cooking Time: 10 minutes
Quantity: Makes about 14
1 block frozen puff pastry, thawed
1 red pepper, chopped
Handful of pine nuts
1 red onion
1 clove garlic
Salt and pepper
1) Chop onion and garlic and fry in a bit of olive oil for a few minutes.
2) Roll out pastry and cut into squares (about 10cm).
3) Arrange squares onto a baking sheet and spread out onion mixture on them.
4) Sprinkle with peppers and pine nuts and cook at 200ºC/400ºF for about 10 minutes
