Nut Roast

Ingredients

150g (6 oz) red lentils
300g (12 oz) mixed nuts (200g (8 oz) peanuts and 100g (4 oz) other nuts (e.g. walnuts, cashews, brazils) works well)
1/2 tin tomatoes
1 tbsp peanut butter
Thyme or mixed herbs
Salt (or crumbled stock cube) and pepper

Instructions

1) Cook lentils in water for about 20 minutes.
2) Put nuts in a blender until finely chopped. Add all other ingredients and blend for a couple of seconds.
3) Press mixture into a greased loaf tin and cook for about 1 hour at 200ºC until solid and browned.
4) Good served with some sort of sauce





Oven Temperature: 200ºC/400ºF/Gas 6
Cooking Time: 60-70 minutes
Quantity: Serves

I always line my loaf tin with some of this stuff so that the nut roast doesn't stick to the tin and comes out perfectly.
