Sue's Thai Curry

Ingredients

4 tbsp vegetable oil
4 carrots (cut into chunks)
3 potatoes (cut into chunks)
1 large onion (chopped)
1/3 to 1/2 a jar of vegan Thai curry paste
1 red, 1 green and 1 yellow pepper (chopped)
1 tin tomatoes (chopped)
1 tin red kidney beans
1 large bag spinach (washed)
1 oz block of creamed coconut
Chopped coriander

Instructions

1) Heat the vegetable oil in a large pan and soften the onion, carrot and potato for about 5 minutes. Add the Thai curry paste and cook for a few minutes more.
2) Add the peppers, the tomatoes and the kidney beans and cook for another 10 minutes.
3) Grate in the coconut, add the spinach and cook for about 5 more minutes until the spinach is soft.
4) Garnish with chopped coriander and serve with rice.





Cooking Time: 20 minutes
Quantity: Serves 6

This was invented by my sister Sue while camping. It looks like a very strange concoction but it's really delicious.
