Vegan Single Cream

Quantity: About 300ml (1/2 pint)

It doesn't whip but it's very nice, and I think it does actually taste like cream!


100ml (4 fl oz) soya milk
5 tbsp caster sugar
2 level tsp cornflour
150ml (6 fl oz) -175ml vegetable oil
2 teaspoons/capfuls natural vanilla essence


1) Put all ingredients except oil in a blender.
2) Switch on the blender, and very very slowly pour in the oil.
3) When it's smooth, pour it into a jug and chill until thickened.
