Gingerbread
Ingredients
100g (4oz) vegetable margarine
100g (4oz) demerara sugar
100g (4 oz) golden syrup
100g (4 oz) black treacle
300g (12 oz) self raising flour
3tsp ground ginger
1tsp ground mixed spice
150ml (6 fl oz) soya milk
Instructions
1) Melt margarine, sugar and syrup and treacle over a low heat. Stir, and take off the heat.
2) Put flour, baking powder and spices into a bowl and mix in syrup mixture.
3) Pour into oblong tin (7"x11") and cook for about 25 minutes at 200ºC/400ºF until cooked through.
