Gingerbread



Oven Temperature: 200C/400F/Gas 6
Cooking Time: 25 minutes
Quantity: Makes 8 slices

Nice with lemon icing.


Ingredients

100g (4oz) vegetable margarine
100g (4oz) demerara sugar
100g (4 oz) golden syrup
100g (4 oz) black treacle
300g (12 oz) self raising flour
1 teaspoon of baking powder
3tsp ground ginger
1tsp ground mixed spice
150ml (6 fl oz) soya milk

Instructions

1) Melt margarine, sugar and syrup and treacle over a low heat. Stir, and take off the heat.
2) Put flour, baking powder and spices into a bowl and mix in syrup mixture. Stir in the soya milk.
3) Pour into oblong tin (7"x11") and cook for about 25 minutes at 200C/400F until cooked through.
