Chocolate Cream Cheese Icing
Cooking Time: 5 minutes to melt chocolate
Quantity: Makes enough for topping AND filling round chocolate cake. Use half this amount for a tray of cupcakes.
100g (4 oz) vegan cream cheese
50g (2 oz) vegan margarine
75g (3 oz) dark chocolate
500g (1 lb 4 oz) icing sugar
1/2 tsp vanilla essence - optional
1. Break the chocolate into pieces, and melt it in a bowl over a pan of simmering water.
2. Blend the cream cheese and margarine in a bowl until smooth, then stir in the melted chocolate.
3. Sieve the icing sugar and beat it into the cream cheese and margarine a little at a time.
4. Add vanilla if you're using it.
