Banana & Date Muffins
Ingredients
175g (7 oz) self raising flour
1 1/2tsp baking powder
1 tbsp soya flour
50g (2 oz) soft brown sugar
2 small-medium ripe bananas
75g (3 oz) chopped dates
4tbsp vegetable oil
100ml (4 fl oz) soya milk/water
1/4 tsp white wine vinegar
Instructions
1) Mix flour, baking powder, soya flour and sugar together in a bowl.
2) Mash the bananas and stir in the chopped dates.
3) Stir the fruit into the flour mixture, adding oil, soya milk/water and vinegar until just combined.
3) Bake in non-stick muffin tins or in muffin cases at 200ºC/400ºF for 20-30 minutes or until browned and cooked through.
