Berry Breakfast




Cooking Time: 20 minutes


A couple of years ago we went to Amsterdam and stayed at a very vegan-friendly b&b (Sunhead) where the host, Carlos, made something similar.


Ingredients

Small bag of frozen summer fruits (Sainsburys have a very cheap 400g red berry mix)
A few tablespoons of sugar, according to taste
1 tub of alpro soya natural yogurt
Fresh strawberries, raspberries and blueberries at room temperature

Instructions

To make the sauce, blitz the frozen fruit in a blender.
Put the bits of frozen fruit and about 4 tablespoons of sugar in a pan and simmer for 20 minutes. Taste it to check it is sweet enough for your tastes and add more sugar if necessary. Cool and chill in the fridge.
Assemble by putting yogurt in the bottom of a wine glass or bowl, then add a few spoonfuls of fruit sauce. Top with fresh berries.
