Oven Temperature: 220ºC/435ºF/Gas 7

Quantity: About 18 mini sausage rolls
You can also make lovely rolls with nut roast mixture.
250g (10 oz) frozen puff pastry
125g sosmix (1 packet) or vegetarian sausages
1/2 teaspoon herbs
1) Defrost the pastry
2) Put the sosmix in a bowl and add 180ml of cold water. (The packet says 200 ml (7 fl oz)). Season with lots of pepper and herbs.
3) Roll out the pastry until it is about 4mm thick, and cut it into strips 10cm wide.
5) Arrange filling down the centre third of the strips. Fold over the edges and seal firmly by inching the edges together. Cut the roll into pieces with a sharp knife.
6) Cook for about 20 minutes at 220ºC/435ºF until golden and 'puffed up'! Cool on wire cooling rack.
